Shrimp Tacos with Cabbage

Wow, these tacos were yummy: http://www.recipegirl.com/2007/09/16/tequila-lime-shrimp-tacos-with-chipotle-cream/. To use up vegetables, I used Recipe Girl’s chipotle cream sauce recipe and tossed it with purple and green cabbage. It turned out very well.

I am no food photographer, so the shrimp taco picture looks kind of gross, but I assure you it was delicious.

Tortellini with Red Sauce

We had my father-in-law over for dinner to thank him for watching our doggie while we were out over the weekend. He loves pasta, so I made tortellini with red sauce. I wanted to use the CSA vegetables, so I added carrots, summer squash, and onions to the red sauce. We also made a side salad using cucumbers and lettuce from the CSA box. It was a delicious and easy dinner.

Rainbow Chard with Carmelized Onions

I decided to make this rainbow chard recipe: http://allrecipes.com/Recipe/red-chard-and-caramelized-onions/Detail.aspx. I wasn’t sure about the olives and capers at first, but I threw them in anyway. I love me some olives, so I figured it couldn’t be all that bad.

 

The finished product was great, but I think next time I will omit the olives and capers. The chard and onions have a yummy enough taste on their own.

Rainbow Chard, Day 1

Like dozens of other people, I joined a CSA. This one is particularly appealing because the delivery point is my office. How fabulous is that? For my first box, I got lettuce, rainbow chard, basil, carrots, onions, various types of squash, different peppers, cabbage, mint, and turnips. The box smelled heavenly. And aren’t the vegetables pretty?

The rainbow chard spoils the fastest, so I decided to make that first. I had never had rainbow chard, or any kind of chard before.

I found a recipe that I modified ever so slightly. I sauteed garlic, onions (from box), rainbow chard (from box), and purple pepper (from box). Then I threw in some cannellini beans. Finally, I tossed that together with some pasta. I meant to shred a little parmesan cheese on top, but I forgot.

It was a successful first effort. I am looking forward to having chard again.
